Happy Wednesday lover! Last night BJ (nickname for when Bob & I combine forces to cook a delicious meal) made stuffed bell peppers. This came out delicious and was very simple to prepare and cook!
Ingredients used:
-1 pack of Ground Beef (or Turkey Ground Beef)
-All Purpose Seasoning (or any seasoning of your preference)
-Diced tomatoes and diced chives
-Quinoa or rice
-Black beans
-Cheese of your preference (we used shredded mozzarella and cheddar)
Steps:
Begin by cooking your ground beef. We used a little all purpose seasoning, along with diced tomatoes and chives to fully cook the beef.
Next prepare your peppers by removing all seeds and stuffing. You want to also pre-heat your oven to 400 degrees F. We also cooked a can of black beans.
Once all your items have been cooked and prepped, just start layering. On a flat baking pan, place your bell peppers. We decided to layer in the following order: black beans, quinoa, ground beef, and cheese. Place in your oven for about ten minutes or until cheese is melted.
Then you can serve on their own, with a side salad, or as we did, with some quinoa. Hope you enjoy!
